Description
Whole, sun-dried hibiscus calyces with deep colour and a bright, cranberry-like tartness. Brew hot in winter or steep cold for the classic Egyptian summer drink.
Steep 2 tablespoons per 500 ml of water; sweeten to taste.
The story
Around Aswan, hibiscus is harvested by hand in late autumn and dried on rooftops under the southern sun. Karkade is served to welcome guests and to toast weddings and celebrations.
